
From our kitchen to yours…
Our award winning sauces, jams and chutneys are small-batch brewed and bottled inside our purpose built kitchen.
We use chilli, fruit and vegetables grown in our spray-free gardens to create rich, full flavoured sauce, chutney and jam.
We focus on FLAVOUR FIRST sauces etc must taste good before we match chillies we have grown for the perfect partnership. I am not as big a wimp as I used to be with the chilli heat level so am slowly adding a few hotter sauces to the mix.
As trees come into full production we are frequently inventing new sauces to add to the collection. New sauces get a “Limited Edition” label printed on our home computer. It then has to earn a commercially designed and printed label.
Mid 2021 and we became registration to produce dried products. Now we are slowly developing a range of dried chilli powder, flavoured salts and seasoning mixes using chillies, herbs, fruit & vege we have grown.
Mid 2023 we got approval to make vinegar from our fruit to use in our products. We now make our own apple cider vinegar and are experimenting with plum and other fruit vinegars.
2024 and we started producing Hot Honey and Garlic Drizzle.
2025 after 2.5 years experimenting we have added Fermented Honey and Garlic and Sweet Heat, Fermented Honey Garlic & Chilli to the line up.
We have three small orchards which are full of heritage varieties of fruit and nut trees. The trees were sourced over a number of years from Edible Garden https://ediblegarden.co.nz/ in Ashhurst (lucky for us just a short drive away). Over the last few years we have also started growing our own seedling fruit and nut trees to add to the collection.
The amount of sauce, chutney and jam we produce in any year is limited by the amount of produce we grow eg A good fruit season = lots of sauce. A bad fruit season = not much sauce that year. Hopefully because we grow such a big variety of fruit we will always have some to use.
